🧁 Herb-Stuffed Muffins, Massive Recalls & Natural Food Safety Shifts!

🥘 Ingredients (Makes ~12 Muffins):

🌿 Dry Ingredients:
• 1 ¼ cups gluten-free all-purpose flour blend (with xanthan or guar gum)
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp sea salt
• ¼ tsp garlic powder
• ¼ tsp onion powder
• ½ tsp dried dill
• ½ tsp dried rosemary
• ½ tsp dried thyme
• ½ tsp dried oregano

🥣 Wet Ingredients:
• 1 cup steamed cauliflower florets (mashed or finely riced)
• ¾ cup rice milk (or other top-9 free milk alternative)
• 1 tsp apple cider vinegar
• 2 tbsp grapeseed oil (or other neutral oil)

🧀 Optional Add-Ins:
• ½ cup vegan, soy-free cheddar-style shreds (e.g., Violife or Daiya)
• Fresh dill for garnish

How to Make It:

  1. Preheat oven to 350 °F and line a muffin tin with paper liners.

  2. Steam cauliflower until soft. Let cool slightly, then mash or rice until smooth.

  3. In a large bowl, whisk dry ingredients (flour, baking powder, herbs, and spices).

  4. In a separate bowl, mix cauliflower, rice milk, vinegar, and oil until smooth.

  5. Combine wet and dry, stirring until just mixed. Fold in vegan cheese shreds if using.

  6. Scoop batter evenly into muffin liners, filling ~¾ full. Top with a sprinkle of fresh dill.

  7. Bake 18–20 minutes, or until a toothpick comes out clean and tops are lightly golden.

  8. Cool in pan for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temp!
