🥘 Ingredients (Serves 4–6):

🌶️ Taco Seasoning (Homemade Blend):

  • 1 tsp chili powder

  • ½ tsp cumin

  • ¼ tsp oregano

  • ¼ tsp garlic powder

  • ¼ tsp onion powder

  • ⅛ tsp red pepper flakes (optional, for heat)

  • ½ tsp salt

🍗 Chicken & Veggies:

  • 2–3 chicken breasts (sliced lengthwise or butterflied)

  • 3 bell peppers (any color), sliced

  • 1 red onion, sliced

  • 1 cup mushrooms, sliced

  • 2 tbsp olive oil

  • Salt & pepper to taste

🍅 Toppings & Extras:

  • ½ cup salsa (check label for allergens)

  • Optional: lime wedges, fresh cilantro, green onion, guacamole, dairy-free cheese

How to Make It:

  1. Preheat oven to 400 °F and line a sheet pan.

  2. Coat chicken with taco seasoning and bake 10 minutes.

  3. Toss veggies with oil, salt, and pepper; then arrange around chicken.

  4. Add salsa to breasts (either now or post-bake) and bake another 10–15 minutes until done.

  5. Optional broil 1–2 minutes for charred edges. Serve over rice or your favorite grain
