🍝 Creamy Allergy-Friendly Mac & Cheese & Crucial Allergen Alerts!

Ingredients:

  • 1 head roasted garlic

  • 10-12 ounces gluten-free penne pasta (e.g., Bionaturae)

  • 4 Tbsp olive or grape seed oil

  • 4 cloves garlic, minced (~2 Tbsp)

  • 4½ Tbsp arrowroot starch

  • 2 cups unsweetened plain almond milk (plus extra as needed)

  • ~¼ tsp each sea salt and pepper (adjust to taste)

  • 5 Tbsp nutritional yeast

  • ½ cup vegan parmesan cheese (plus extra for serving)

How to Make It:

  1. Roast Garlic: Preheat oven to 400°F (204°C). Cut the top off a garlic head, drizzle with oil, salt lightly, wrap in foil, and roast for 45-60 mins until golden and fragrant. Let cool slightly.

  2. Cook Pasta: Boil salted water, cook pasta according to package instructions (8-10 mins). Drain and set aside.

  3. Make Sauce: Heat skillet over medium heat. Add oil and minced garlic, sauté 1-2 mins. Whisk in arrowroot starch, cook 1 min.

  4. Add Almond Milk: Slowly whisk almond milk into skillet, stirring for 2 mins. The mixture will initially appear clumpy.

  5. Blend Sauce: Transfer mixture to blender, squeeze roasted garlic into blender, add salt, pepper, nutritional yeast, and vegan parmesan. Blend until creamy and smooth.

  6. Heat & Combine: Return sauce to skillet, cook on low 2-3 mins until thick and cheesy. Adjust consistency with extra almond milk if needed.

  7. Serve: Add pasta to sauce, stir to coat. Optional: Broil 1-2 mins for golden crust. Top with extra vegan parmesan, serve hot.
