🍔 Delicious Vegan Burger & Must-Know Allergy News!

  • Prep Time: 25 min | Cook Time: 35 min | Total Time: 60 min

Ingredients:

  • 1 cup cooked and cooled brown rice

  • 4 tablespoons avocado oil, divided

  • 1½ cups thinly sliced yellow onion (~1 small onion)

  • 5 cups sliced shiitake mushrooms (or cremini mushrooms)

  • Âľ cup raw cashews

  • ½ – 1 cup oat flour (certified gluten-free if needed)

  • ½ teaspoon sea salt

  • ½ teaspoon black pepper

  • 2 teaspoons miso paste (chickpea, yellow, or white soy miso)

  • 1 tablespoon coconut aminos (or tamari)

  • ÂĽ teaspoon smoked paprika

How to Make It:

  1. Cook Rice: Prepare 1 cup cooked brown rice and set aside.

  2. Caramelize Onions: Sauté onions in avocado oil until translucent, then continue cooking on low heat, covered, stirring occasionally, until caramelized (~25 min).

  3. Cook Mushrooms: Add mushrooms to onions; sauté until soft (~5 min). Cool slightly.

  4. Prep Cashews: Pulse cashews in food processor until crumbly.

  5. Blend Mixture: Pulse cooled rice, onions, mushrooms, oat flour, miso, coconut aminos, smoked paprika, salt, pepper, and cashews until combined.

  6. Form Patties: Shape mixture into patties.

  7. Cook Patties: Fry patties in avocado oil until crisp on both sides (~3 min per side).

  8. Burger Buns: Use Gluten & Soy Free buns ( Canyon Bakehouse or Unrefined Bakery)
