Ingredients:

  • 1 tablespoon filtered water

  • 3 tablespoons salted dairy-free butter

  • 3 tablespoons spelt flour (or substitute with all-purpose gluten-free flour)

  • ½ medium white or yellow onion, chopped

  • 4 cloves garlic, minced

  • 2½ cups unsweetened dairy-free milk

  • 7 ounces cooked gluten-free pasta noodles

  • 2 cups chopped bella mushrooms (or substitute with white mushrooms)

  • 1 cup peas

  • 2 tablespoons nutritional yeast

  • ½ teaspoon salt

  • ½ teaspoon dried oregano

  • ¼ teaspoon pepper

How to Make It:

  1. In a large pan, heat the filtered water and dairy-free butter over medium heat until melted.

  2. Add the chopped onion and minced garlic, sautéing until translucent.

  3. Stir in the flour to create a roux, cooking for about 2 minutes.

  4. Gradually whisk in the dairy-free milk, ensuring no lumps form.

  5. Add the chopped mushrooms and peas, cooking until tender.

  6. Stir in the nutritional yeast, salt, oregano, and pepper.

  7. Combine the cooked pasta with the sauce, mixing well to coat.

  8. Serve warm and enjoy!
